Roast Parsnips with Honey Glaze
Prep/Cook Time: Approximately 60 minutes (10 mins parboil + 40 mins roasting)
Ingredients
- 2 kg parsnips
- ½ bunch fresh thyme
- 2 tablespoons runny honey
- Olive oil
- 10g butter
- Sea salt
- Black pepper
Instructions
- Scrub the parsnips clean, then slice in half lengthways.
- Parboil the parsnips in boiling salted water for 10 minutes, then drain well.
- Pick the thyme leaves. Toss the parsnips with the honey, thyme, a pinch of sea salt and black pepper, 10g of butter and 2 tablespoons of oil.
- Tip into a roasting tray and arrange in one layer, then roast for 40 minutes, or until golden.
Clever Twists
Crispy Parmesan Version
- Toss blanched parsnips in flour and finely grated Parmesan before roasting
- Roasts until crisp and golden for extra crunch and flavour
Festive Rosemary, Orange & Maple Syrup Version
- Add orange peel and sprigs of fresh rosemary to the roasting tray
- Toss blanched parsnips with maple syrup instead of honey
- Roast as usual
